For Whole Wheat Jaggery Pancakes
1 cup whole wheat flour (gehun ka atta)
1/3 cup grated jaggery (gur)
1 tsp cardamom (elaichi) powder
a pinch of baking soda
2 tsp coconut oil or ghee for greasing

- Make a batter by putting whole wheat flour and jaggery water in a bowl. Whisk well to break all lumps.
- Gradually add enough water to make a batter of pancake consistency. We added 3 tablespoons water.
- Add cardamom powder, baking powder, salt and mix gently.
- Heat a non stick pan and grease it with coconut oil or ghee.
- Pour a ladle full of batter and spread in a circular direction to make an 125 mm (5 inches) circle.
- Cook on medium heat for 50 seconds or until jali (holes) appear.
- Grease with oil, flip and cook the other side the same way. Keeping flipping and cooking till golden brown. Repeat again to make 6 more {span class="bold1"}whole wheat jaggery pancakes{/span}.
