Zucchini Tomato and Mozzarella Caprese, Italian Stir-fry

In this Italian dish, the mozzarella cheese is the real star! Caprese is a type of Italian salad in which sautéed veggies are tossed with grated or sliced mozzarella cheese.
The crunch of onions, the pungency of garlic, the succulence of zucchini and the juiciness of tomatoes are all accentuated by the addition of the grated cheese.
Basil gives the Zucchini, Tomato and Mozzarella Caprese a nice herby touch while pepper gives a mild spiciness, which makes the caprese all the more enjoyable.

Makes 3 servings
1 cup sliced zucchini
1/2 cup tomato cubes
2 tbsp grated mozzarella cheese
1 tbsp olive oil
1/2 cup finely chopped onions
2 tsp finely chopped garlic (lehsun)
2 tbsp basil , torn into pieces
salt and freshly ground black pepper (kalimirch) to taste
- Method
- Heat the olive oil in a broad non-stick pan, add the onions and garlic and sauté on a medium flame for 2 minutes.
- Add the zucchini and sauté on medium flame for 5 minutes.
- Add the tomatoes, basil, salt and pepper and sauté on medium flame for 30 seconds.
- Switch off the flame, add the cheese and toss it gently.
- Serve immediately.
