Amlana is a delicious Rajasthani drink made with tamarind pulp, perked up with spices like pepper and cardamom. The addition of black salt imparts a wonderful flavour, which is further enhanced by the minty garnish.
To make amlana, combine the tamarind and 1 cup of water in a deep bowl and mix well. Cover with a lid and keep aside for 2 hours. Transfer the tamarind-water mixture in a mixer and blend till smooth. Squeeze and strain the pulp in a deep bowl using a muslin cloth. Add the powdered sugar, pepper powder, cardamom powder, black salt, salt and 3 cups of water and mix well. Refrigerate for at least 1 hour. Pour equal quantities of the drink into 4 individual glasses and serve chilled garnished with mint leaves.

Makes 4 glasses
For Amlana
2 tbsp chopped tamarind (imli)
1/2 cup powdered sugar
1/4 tsp freshly ground black pepper (kalimirch)
1/4 tsp cardamom (elaichi) powder
1/2 tsp black salt (sanchal)
salt to taste
For The Garnish
2 tbsp finely chopped mint leaves (phudina)

Method for Amlana

While buying tamarind, check for the softness and freshness of tamarind by lightly pressing the packet. Do not buy tamarind that is too hard as it might not give enough pulp when soaked.

In a deep bowl, put chopped imli, tamrind for to make amlana.

Add one cup of water.

Mix well. Cover with a lid and keep aside for 2 hours. This soaking time is necessary for making tamarind pulp.

This is what soaked tamarind looks like. You will notice that the imli will absorb water and it will swell slightly.

Transfer the tamarind-water mixture in a mixer jar.

Blend it till smooth.

Strain the tamarind pulp in a deep bowl using a muslin cloth. If you wish you can also use a stariner with thin holes.

Squeeze the muslin cloth to strain and remove most of the pulp.

To this add the powdered sugar. We have used powdered sugar so that it mixes easily with the tamarind pulp.

Add pepper powder.

Add cardamom powder. This gives a rich taste to the Rajasthani amlana drink.

Add black salt and salt.

Add 3 cups of water to make imli ka amlana.

Mix well using a spoon.

Refrigerate for atleast 1 hour. This resting time for all the flavours to blend in the drink.

Pour equal quantities of the Indian drink amlana into 4 individual glasses and serve chilled garnished with mint leaves.
