how to make amritsari paneer bhurji

  1. Heat 2 tbsp oil in a broad non-stick pan.
  2. Add 1 tbsp finely chopped garlic (lehsun). Garlic brings a pungent, savory kick to the dish. It releases its fragrance, making the bhurji even more enticing.
  3. Add 1 tsp finely chopped ginger (adrak). A small amount of ginger can add depth of flavor to a dish without overpowering it.
  4. Add 1 tsp finely chopped green chillies. The chillies bring a kick of spice to the dish.
  5. Sauté for a few seconds.
  6. Add 1 cup finely chopped onions. The onions are sautéed until softened and translucent, releasing their natural sugars that caramelize and add depth of flavor to the dish.
  7. Cook on a medium flame for 2 to 3 minutes.
  8. Add ½ cup finely chopped tomatoes. Chopped tomatoes cook down and become part of the base for the bhurji. They release their juices, which combine with the spices to create a flavorful sauce that coats the paneer.
  9. Cook for 2 to 3 minutes.
  10. Add the prepared paste.
  11. Add 2 tbsp fresh cream. The main benefit is a richer, creamier texture. The fat in the cream coats the paneer and other ingredients, creating a smoother and more luxurious mouthfeel.
  12. Mix well.
  13. Add 1 cup hot water.
  14. Cook on a medium flame for 2 to 3 minutes.
  15. Add 1½ cups grated paneer (cottage cheese). Unlike crumbled paneer which creates a more scrambled egg-like texture, thickly grated paneer holds its shape a bit better. This gives the Amritsari Bhurji a more substantial bite.
  16. Add 2 tsp dried fenugreek leaves (kasuri methi). Kasuri methi is a key ingredient in Amritsari paneer bhurji that adds a unique flavor and aroma to the dish.
  17. Add salt to taste.
  18. Add 1 tsp butter.
