Makes 1 loaf (12 slices)
For Eggless Chocolate Walnut Cake
1/4 cup soft butter
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup plain flour (maida)
1/4 cup cocoa powder
1 tsp baking powder
1/2 tsp baking soda
3/4 cup milk
1/2 tsp vinegar
1/2 cup roughly chopped walnuts (akhrot)
1/4 cup chocolate chips
1 tsp plain flour (maida) for coating
For Topping
2 tbsp roughly chopped walnuts (akhrot)
2 tbsp chocolate chips

- For eggless chocolate walnut cake
- To make {span class="bold1"}chocolate walnut cake{/span}, combine milk and vinegar in a bowl. Mix well and keep aside for 5 minutes.
- Combine walnuts, chocolate chips and 1 tsp plain flour in another small bowl. Mix well and keep aside.
- In a big bowl, add soft butter and powdered sugar, whisk it well till light and fluffy.
- Add vanilla extract and whisk well. In the same bowl, sieve plain flour, cocoa powder, baking powder and baking soda.
- Add milk and mix well to make a cake batter. Fold in the coated walnuts and chocolate chips in the batter.
- Transfer the batter into a greased and lined tin. Bake in a preheated oven at 180° c for 30-35 minutes or until the skewers inserted comes out clean.
- Carefully demould the cake from the tin and cut into 12 equal slices.

CB - one of my favourite sweet snacks! I substitute the atta with ground oats and add chia seeds. Instead of castor sugar, I feel raisins or dried strawberries or cranberries are better sweeteners.
