To make kaddu ka raita, heat the ghee in a deep pan and add the cumin seeds. Add the green chillies and sauté on a medium flame for a few seconds. Remove from the flame and allow it to cool for 2 minutes. Once cooled, mash the pumpkin pieces with the help of a masher. Add the curds and mix well. Refrigerate for 1 hour and serve chilled garnished with peanuts and coriander.

Ingredients


For Kaddu ka Raita
2 cups finely chopped red pumpkin (bhopla / kaddu)
1 tsp ghee
1 tsp cumin seeds (jeera)
2 tsp finely chopped green chillies
1 tsp sugar (optional)
1 1/2 cups whisked curds (dahi)
2 tbsp milk
salt to taste

For The Garnish
1 tbsp crushed roasted peanuts
2 tsp finely chopped coriander (dhania)

  13. Add 1 1/2 cups whisked curds (dahi).
  14. Add 2 tbsp milk.
