  1. To make {span class="bold1"}shahi gobhi masala{/span}, heat 2 tbsp oil in a broad pan, add cauliflower florets and sauté on medium flame for 3 to 4 minutes till golden brown.
  2. Remove and keep aside.
  3. In the same pan heat 1 tbsp oil, add clove, cinnamon, cumin seeds, cashew nuts, garlic, ginger and onions, sauté for 2 minutes.
  4. Add tomatoes and cook on medium flame for 3 to 4 minutes, while stirring occasionally.
  5. Cool the mixture completely into a big plate and blend into a smooth paste.
  6. In the same pan heat 2 tbsp butter, add turmeric powder, chilli powder, coriander powder, cumin seeds powder and sauté for few seconds on low flame.
  7. Add the prepared paste and cook on medium flame for 3 to 4 minutes, while stirring occasionally.
  8. Add fried gobhi, green peas, kasuri methi, fresh cream and 1 cup hot water, mix well.
  9. Cook on medium flame for 5 to 8 minutes.
  10. Serve {span class="bold1"}shahi gobhi masala{/span} hot garnished with coriander.

  1. To make shahi gobhi masala, heat 2 tbsp oil in a broad pan.
  2. Add 2 cups blanched cauliflower florets.
  3. Sauté on medium flame for 3 to 4 minutes till golden brown.
  4. Remove and keep aside.
  5. In the same pan heat 1 tbsp oil.
  6. Add 3 clove.
  7. Add 1 small cinnamon.
  8. Add ½ tsp cumin seeds.
  9. Add 1 tbsp cashew nuts (kaju).
  10. Add 5 garlic (lehsun) cloves.
  11. Add 1 tsp roughly chopped ginger.
  12. Add 1 cup roughly chopped onions.
  13. Sauté for 2 minutes.
  14. Add 1½ cups roughly chopped tomatoes.
  15. Cook on medium flame for 3 to 4 minutes, while stirring occasionally.
  16. Cool the mixture completely into a big plate.
  17. Transfer into the mixer jar.
  18. Blend into a smooth paste.
  19. In the same pan heat 2 tbsp butter.
  20. Add ½ tsp turmeric powder. 
     
  21. Add 1 tbsp chilli powder.
  22. Add 2 tsp coriander powder.
  23. Add 1 tsp cumin seeds powder.
  24. Sauté for few seconds on low flame.
  25. Add the prepared paste.
  26. Cook on medium flame for 3 to 4 minutes, while stirring occasionally.
  27. Add the fried gobhi. 
  28. Add ½ cup boiled green peas.
  29. Add 1 tbsp kasuri methi. 
  30. Add salt to taste.
  31. Add 1 tbsp fresh cream.
  32. Add 1 cup hot water.
  33. Mix well.
  34. Cook on medium flame for 5 to 8 minutes.
  35. Serve shahi gobhi masala hot garnished with coriander.

Par boiled cauliflower and green peas cooked in tomato purée and curds and rich Indian spices. Cut the ghee and this will be an extremely healthy vegetable. For me, the paste taste is out of the world and that what makes this vegetable special.
