Ingredients


For The Tart Base
1 large bowl of oreo cookies or any other chocolate cookies
75 gms melted butter

For The Cream
250 gms softened cream cheese
200 gms whipping cream
1 cup strawberry jam
1 cup diced fresh strawberries
1 tsp vanilla essence
150 gms powdered white sugar

For The Strawbery Surprise Filling
1 cup fresh strawberries
1 cinnamon (dalchini) stick
50 gms sugar
3 cups water

Method
**For the tart base

  1. Grind the cookies in a food processor, or crush them with a rolling pin, till they reach a fine dust.
  2. Pour in the melted butter and mix very well.
  3. In a pie dish, or any flat deep glassware, pour in the tart base, and pack it in with fingers, till it forms a smooth and tight base with no holes. Refrigerate till it hardens, or 2 hours.

**For the cream

  1. While the tart base sets, mix the cream cheese with the whipping cream and sugar with a whip or a blender.
  2. Add the vanilla essence and strawberry jam and beat well.
  3. Add the diced strawberries, and fold carefully, to ensure that the beaten cream does not loose its fluffiness. refrigerate till needed.

  1. In a deep vessel,boil the sugar, cinnamon and water to form a simple syrup.
  2. Add the strawberries and boil till cooked but not mushy, and the syrup turns pink. This can be tested with toothpicks. Drain the berries and reserve 1 cup of the pink syrup.
  3. Boil down the reserved syrup to a thicker consistency. it should go down to about half cup.

  1. To assemble, take out the ready tart base.
  2. Spoon half the strawberry cream onto the base, and level with a flat tool.
  3. Slice and arrange the poached strawberries over this slayer.
  4. Cover with another layer of the strawberry cream.
  5. Make peaks on the top layer by pushing up the cream with a fork or spoon. Drizzle the strawberry syrup in whimsical patterns over the top.
  6. Slice and serve cold.
