Ready in a jiffy, the sooji thalipeeth is a common breakfast recipe in the Saraswat Brahman community.

It is kind of similar to Koki of Sindhi and Bhakri of Goan cuisine. This thalipeeth is like a thick pancake made with a quick-fix dough of roasted rava, perked up with coconut, onions et al.

Once cooked, the Maharashtrian rava thalipeeth tastes quite exquisite with an awesome texture that is crisp outside and soft inside. While it is quite an easy dish, what differentiates an excellent thalipeeth from a regular thalipeeth is the way in which it has been shaped.

Enjoy quick rava thalipeeth with Red Chilli Thecha, Green Chilli Thecha and a dollop of Safed Makhan You can also have it with Green Chutney or tomato ketchup.

Tips for quick rava thalipeeth. 1. To roast semolina, put it in a broad non-stick pan and dry roast it on a slow flame for 3 to 4 minutes or till it changes colour slightly. 2. How to make Quick Rava Thalipeeth in detail

  1. Take semolina in a deep bowl. The grains of the semolina should be of thicker variety.
  2. Add the onions. This gives a good crunch to the thalipeeth.
  3. Add the coconut. The proportion of coconut and semolina should be 1:1.
  4. Add the green chillies for that much-needed spice.
  5. Add the turmeric powder.
  6. Add the coriander. It enhances the aroma and flavour of Indian dishes.
  7. Add the sugar. Though it's very small quantity it adds on to balance the taste.
  8. Add the salt.
  9. Add approx. ¼ cup of water, mix well so the mixture binds well. The amount of water added should be just enough for binding so as to not release the gluten from the semolina. Too much water may make shaping the thalipeeth difficult. Also add water very gradually and keep checking that the mixture binds just enough perfectly to form a ball.
  10. Divide the mixture into 5 equal portions.
  11. Heat a non-stick tava (griddle) and grease it with ½ tsp of oil.
  12. Take a portion of the mixture and flatten it using your palms.
  13. Place the flattened ball on the greased non-stick tava (griddle).
  14. Wet your hands with little water, flatten the ball further and spread it using your fingers to make a 125 mm. (5") diameter circle.
  15. Again wet your fingers and dab it very well. The mixture should bind together like a roti, though some rough edges are fine.
  16. Cook it on one side on a slow flame for 2 to 3 minutes or till golden brown spots appear on one side. Do not hurry up in turning the first side, else the thalipeeth will disintegrate and then re-shaping will be very difficult. Then turn around and cook on the other side also, using ½ tsp of oil, till golden brown spots appear on the other side too.
  17. Finally cook well on both sides till it turns crisp from outside but it is soft from inside.
  18. Repeat steps 11 to 18 to make 4 more Quick Ravyache Thalieepth (Semolina pancakes). While making the next thalipeeth if you feel the mixture is not binding well because the semolina absorbs water with time, then add little water again and bind it well.
  19. Serve sooji thalipeeth with green chutney or tomato ketchup.
