Upvaas Thalipeeth
1/2 cup rajgira (amaranth) flour
1/4 cup peeled and grated raw potatoes
2 tbsp roasted and coarsely crushed peanuts
1 tsp green chilli paste
1/2 tsp lemon juice
rock salt (sendha namak) to taste
2 tbsp finely chopped coriander (dhania)
1 tsp ghee for greasing and cooking

For Serving With The Upvaas Thalipeeth

  1. To make the upvaas thalipeeth, combine all the ingredients in a deep bowl and knead into a soft dough using approx. 1 ½ tbsp water.
  2. Divide the dough into 4 equal portions and keep aside.
  3. Heat a non-stick tava (griddle) and grease it lightly with ghee.
  4. Grease your fingers with a little ghee, place a portion of the dough on the tava (griddle) and pat it evenly with greased fingers to form a 100 mm. (4”) diameter circle.
  5. Cook, using a 1 tsp ghee (½ tsp on each side), till they turn golden brown spots appear on both the sides.
  6. Repeat steps 4 and 5 to make 3 more upvaas thalipeeth.
  7. Serve the upvaas thalipeeth hot with green chutney.

To make the dough for Upvaas Thalipeeth

  1. To make the dough for upvaas thalipeeth recipe | rajgira upvas thalipeeth | Maharashtrian upvaas thalipeeth | Take the peanuts in a plate and remove the skin with your hands.You can also take salted and de-skinned ones which are easily available in grocery stores.
  2. Add the peanuts to a mortar to crush them.
  3. Crush the peanuts coarsely and keep them aside.
  4. Take a deep bowl and add the cup Rajgira flour into it. Rajgira is the Hindi word for Amaranth.
  5. Add the peeled and grated raw potatoes. Potatoes act as binding agent for your Upvaas Thalipeeth. Grated Potatoes are added as they give a nice mouthfeel but if you want, you can add boiled potatoes and mashed potatoes instead.
  6. Add the coarsely crushed peanuts for the desired crunch.
  7. Add the green chili paste to spice up the Upvaas thalipeeth.
  8. Now add lemon juice for a hint of tanginess.
  9. Now add the rock salt (sendha namak in Hindi) to taste. We are using rock salt because people don’t use regular salt when they are fasting.
  10. Now add chopped coriander leaves to give your Upvaas thalipeeth a hint of freshness.
  11. Add approx 1½ tbsp water.
  12. Knead all the ingredients into a soft dough. You can use more water if required.
  13. Divide the dough into 4 equal portions. Keep them aside.

To make Upvaas Thalipeeth

  1. To make  upvaas thalipeeth recipe | rajgira upvas thalipeeth | Maharashtrian upvaas thalipeeth |  take a non-stick tava (griddle) and grease it lightly with ghee and heat it up.
  2. Grease your fingers with a little ghee.
  3. Place a portion of the dough on the tava (griddle) and pat it evenly with greased fingers to form a 100 mm. (4”) diameter circle. Be gentle when you are patting it to prevent cracks in your Upavaas thalipeeth. You will not be able to roll the dough as it would be too sticky to be rolled out. You can either pat it on the tava directly or pat it between 2 thick plastic sheets and then place it onto the tava. 
  4. Cook on one side using about ½ tsp ghee. 
  5. Flip and brush the Upvaas thalipeeth with ½ tsp more ghee.
  6. Press the thalipeeth with the help of a spatula so that it is cooked properly and becomes crispy.
  7. Cook till golden brown spots appear on both the sides. Brush your Upvaas thalipeeth with more ghee if desired.
  8. Repeat the steps to make 3 more  upvaas thalipeeths | rajgira upvas thalipeeth | Maharashtrian upvaas thalipeeth | 
  9. Serve your  upvaas thalipeeth | rajgira upvas thalipeeth | Maharashtrian upvaas thalipeeth |  hot along with green chutney (Faraal recipe).

I also use sabudana/sago powder/flour & shingada powder/flour, but use boiled potato &/or sweet potato also.

I followed the recipe exactly. Hubby loved it. This was my first attempt using rajgira flour. I will try different combo suggested by other users too. :) As I was making for upvas I did no change. Next time for a snack I will try variations. Thanks all!

I made this upavas thalipeeth today.The result were very very good.My guest were very happy to have them with shrikhand.I made it little bit spicy and did add moraiyo (Indian Sawa millet) and sabudana flour and also little sesame seeds.But it turned out really good.

I tried this recipe with rajgira flour, shingara flour ( waterchestnut ), grated dudhi and other spices. It gave amazing taste, for my husband does not eat dudhi at all. But with this recipe he could not make it was dudhi in it. It was wonderful surprise for my hubby. Thanx a lot.
