In rava toast a mixture of semolina with finely chopped veggies is used as a topping on wheat bread slices, and the whole arrangement is toasted till perfectly crisp. You can add any veggies of your choice like carrot, bell peppers, sweet corn, beetroot, cucumber and even shredded lettuce or spinach can be added to sooji toast.
Semolina always lends a nice grainy texture to a dish, and when toasted it gives out a wonderful aroma and a rich flavour. This rava toast capitalizes on these wonderful qualities of semolina.

For The Topping
1/4 cup semolina (rava / sooji)
2 tbsp finely chopped onions
2 tbsp finely chopped capsicum
2 tbsp finely chopped tomatoes
1 tbsp finely chopped coriander (dhania)
2 tbsp curd (dahi)
1/4 tsp chilli powder
salt to taste

4 whole wheat bread slices
oil for greasing and cooking

For the topping

- Combine all ingredients in a deep bowl and mix well.
- Divide the mixture into 4 equal portions and keep aside.

- To make {span class="bold1"}rava toast{/span}, place all the bread slices on a clean, dry surface and spread a portion of the topping evenly over it.
- Heat a non-stick tava (griddle) and grease it with little oil. Place 2 open toasts on it with the topping side facing downwards and cook it on a medium flame using a little oil, till the topping turns golden brown in colour.
- Turnover and cook on the other side till they turn golden brown in colour.
- Cut each toasts diagonally into 2 equal pieces.
- Repeat steps 2 to 4 to cook 2 more toasts.
- Serve the {span class="bold1"}rava toast{/span} immediately or cool completely and pack in a tiffin box.

For assembling sooji toast, place all the bread slices on a clean, dry surface. You can use any bread of your choice. We have used regular white bread slices but, multigrain or whole wheat bread are some healthy alternatives.

Spread a portion of the topping evenly over it. Don’t spread it too thick or else the instant rava toast will not turn crispy and remain uncooked from the middle. If you are preparing suji toasts in large quantity, don’t spread rava-veggie topping mixture on all the bread slices once as they tend to turn soggy.

For cooking rava toast, heat a non-stick tava (griddle) and grease it with little oil. You can use ghee or butter too.

Place 2 open toasts on it with the topping side facing downwards. Cook it on a medium flame using a little oil, till the topping turns golden brown in colour.

Turnover and cook bread rava toast on the other side till they turn golden brown in colour. Do not cook on high flame or else the rava toast will not be crispy.
