Makes 0.5 cup
For Schezuan Sauce
12 whole dry kashmiri red chillies , soaked in warm for 15 minutes
2 tbsp chopped garlic (lehsun)
4 tbsp white vinegar
2 tsp sugar
2 tbsp sesame (til) oil
1 tsp salt

- Combine all the ingredients in a mixer except the oil and blend into a fine paste. Transfer into a bowl and keep aside.
- Heat the oil to smoking point and pour over the chilli-garlic paste. Mix well, allow it to cool and store refrigerated in an air-tight container.
- Use the {span class="bold1"}schezwan sauce{/span} as required.

How to make schezuan sauce

Transfer the water to a deep bowl and add dry red chillies. We have made use of Kashmiri red chillies which provides a fiery red colour and mild heat but, you can use any other variety or a combination of 1-2 dried red chillies depending upon the spice level you can handle. Also, we have not removed the seeds of the chillies but if you want a more smooth schezwan sauce and less spicy, you can remove the seeds of the chillies before putting them in water.

After 15 minutes, drain out all the water from the chillies and discard it.

Transfer the soaked and drained chillies to a mixer jar.

Add chopped garlic. Smash the garlic with the back of a knife to quickly remove the skin or soak the garlic cloves in hot water for a while, as it makes them easier to peel. Also, oil your hands to avoid the garlicky aroma lingering on your fingertips.

Add white vinegar. It acts as a preservative and increases the shelf life of Indo-Chinese schezuan sauce and also help cut through spiciness.

Add sugar. It counteracts vinegar and neutralizes the flavour of spicy schezwan sauce.

Add salt.

Blend into a fine paste without using any water.

Transfer Chinese schezuan sauce in a bowl and keep aside.

Heat the sesame oil to smoking point. The smoking point is the temperature at which the oil begins to smoke. Smoking breakdowns the fat due to heat and create a unique smell and flavor in sesame oil.

Pour over the chilli-garlic paste.

Mix well and schezuan sauce is ready.
