  1. Heat the oil in a deep non-stick pan and add the cumin seeds.
  2. When the seeds crackle, add the garlic and green chillies and sauté on a medium flame for a few seconds.
  3. Add the onions and sauté on a medium flame for 2 minutes.
  4. Add the chilli powder, turmeric powder, coriander powder, dry mango powder, garam masala, asafoetida and salt, mix well and cook on a medium flame for a few seconds.
  5. Add the bhindi, mix gently and cook on a medium flame for 10 minutes ,while tossing it occasionally.
  6. Serve hot garnished with coriander.
