  1. To make stir fried bhindi with peanuts sabzi, heat the coconut oil or oil in a broad non-stick pan, add the cumin seeds and asafoetida and sauté on a medium flame for a few seconds.
  2. Add the onions, ginger-garlic paste and sauté on a medium flame for 2 to 3 minutes.
  3. Add the diagonally cut ladies finger and sauté on a medium flame for 3 minutes.
  4. Add the tomatoes, turmeric powder, chilli powder, coriander powder and salt. Mix gently.
  5. Cook on a medium flame for 3 minutes, while stirring occasionally.
  6. Switch off the flame, add the roasted and coarsely crushed peanuts and mix well.
  7. Serve the stir fried bhindi with peanuts sabzi hot.
