Ingredients
4 lotus stem (kamal kakdi / bhein) , peeled and cut into 3" long pieces
1 cup rajgira flour
salt to taste
1 tsp freshly ground black pepper powder
1 tsp poppy seeds (khus-khus)
oil for frying
Method
    Method
  1. Slit the lotus stem pieces vertically but do not cut into half.
  2. Pressure cook the lotus stem for 1 whistle, drain and let it cool.
  3. In a bowl combine the salt, pepper, poppy seeds and fill the mix in lotus stem and flatten with both the palms.
  4. In a flat pan, put some oil and saute the lotus stems till they are crisp and brown from both the sides
  5. Let it cool.
  6. Make a batter of rajgeera flour, salt and black pepper powder by adding some water.
  7. Dip the cooked lotus stems in this batter and deep fry till crisp.
  8. Serve hot with curd peanut chutney.
