We have made our tawa butter naan using refined flour and have used yeast. Yet some people use curd and baking soda for the fermentation of the flour. Be very careful while kneading the tawa naan dough as if the dough would have not been kneaded well, the naan will come out chewy. Naan is traditionally cooked in an earthen pot which is known as tandoor and has a smoky flavor. We have made restaurant style naan at home which tastes great and goes well with Punjabi sabzis. The seasoning of nigella seeds on top gives it a unique taste. Serve them hot with any Subzis or Dals of your choice.
