Makes 4 sandwiches
For The Stuffing
1/2 cup crumbled feta cheese
4 tbsp finely chopped basil
2 tbsp olive oil
salt and to taste
Other Ingredients
8 brown bread slices
butter for spreading
16 thinly sliced tomatoes

- For the stuffing
- Combine the feta cheese, basil, olive oil, salt and pepper in a bowl and mix well.
- Divide the stuffing into 2 equal portions and keep aside.

- Place 2 bread slices on a clean, dry surface and butter the bread slices lightly.
- Place 4 tomato slices on 1 bread slices, sprinkle salt and pepper.
- Place 1 portion of the prepared stuffing on it and spread it evenly.
- Cover with another buttered side facing downwards and cut into triangles.
- Repeat steps 1 to 4 to make 3 more sandwiches.
- Serve immediately.

Feta, basil and tomatoes make a nice combination for a salad. I toasted mine and skipped putting butter in the inside.
