Ingredients

1 cup rice (chawal) (washed and soaked in salted water for 30 minutes)
1 cup boiled well mashed potato
1 onion, cut into thin strips
1 potato, boiled and cut into fingers
1 carrot jullienes
5 to 6 french beans cut in strips 2" long
1 tbsp shredded cabbage
1/2 cup spinach (palak) puree
3 green chillies, crushed
1 tsp grated ginger (adrak)
1/2 cup curds (dahi)
6 tbsp butter or ghee
1 tsp chopped coriander (dhania)
salt to taste
black pepper (kalimirch) powder to taste
1 pinch soda bi carb
1 tbsp fresh cream
Method


  1. Add salt, pepper, cream, soda, 1 tbsp. butter to mashed potato.
  2. Mix till smooth. put in an icing bag with large star nozzle. keep aside.
  3. Boil rice in plenty of water, cook till grain is not hard.
  4. Drain water in a large colander, spread the rice in a plate to cool.
  5. Heat 3 tbsp. butter in a pan, add ginger, chilli, stir.
  6. Add spinach puree, salt, curds and cook till thick.
  7. Add a tsp. of flour to thicken if required.
  8. Cool a bit and pour over rice.
  9. Mix with fingers till well blended. keep aside.
  10. Heat remaining butter in a pan.
  11. Add onion, stir fry till pink.
  12. Add carrot, potato finger, french beans, stir fry till tender.

To assemble casserole:

  1. Grease the casserole, spread rice and press down lightly.
  2. Spread the stirfried vegetables over rice.
  3. Even out to make a uniform layer.
  4. Pipe out crisscross lines of the mashed potato.
  5. Bake in a hot oven till potato gets tinges of brown.
  6. Remove, sprinkle chopped coriander and serve hot.
