Ingredients


For The Rice
2 cups cooked long grained rice (basmati)
1 tbsp butter
1/2 cup milk
salt to taste

For The Corn Mixture
1 1/4 cups boiled and coarsely crushed sweet corn kernels
1 tbsp butter
1/2 tsp finely chopped green chillies
1/4 cup finely chopped onions
1/4 cup milk
1 tbsp fresh cream
1/2 tsp sugar
salt to taste

For The Creamy Spinach
3 cups shredded spinach (palak)
1 tbsp butter
1/2 tsp finely chopped green chillies
1/4 cup finely chopped onions
salt to taste
1 tbsp fresh cream

For The Tomato Sauce
1 cup fresh tomato pulp
1 tbsp butter
1/2 tsp garlic (lehsun) paste
1/4 cup finely chopped onions
1/2 tsp chilli powder
1/2 tsp dried oregano
1 tsp sugar
salt to taste
1 tbsp fresh cream

Other Ingredients
2 tbsp grated processed cheese

Method
For the rice

  1. Heat the butter in a broad non-stick pan, add the rice, milk and salt, mix gently and cook on a medium flame for 1 minute, while stirring occasionally. Keep aside.

For the corn mixture

  1. Heat the butter in a broad non-stick pan, add the green chillies and onions and sauté on a medium flame for 30 seconds.
  2. Add the sweet corn, milk, fresh cream, sugar and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside.

For the creamy spinach

  1. Heat the butter in a broad non-stick pan, add the green chillies and onions and sauté on a medium flame for 30 seconds.
  2. Add the spinach and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  3. Add the fresh cream, mix well and cook on a medium flame for 30 seconds, while stirring occasionally. Keep aside.

For the tomato sauce

    For the tomato sauce
  1. Heat the butter in a broad non-stick pan, add the garlic paste and onions and sauté on a medium flame for 1 minute.
  2. Add the tomato pulp, chilli powder, oregano, sugar, salt and 1 tbsp of water, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  3. Add the fresh cream, mix well and cook on a medium flame for 1 more minute, while stirring occasionally. Keep aside.

  1. Spread the creamy spinach evenly at the bottom of the baking dish.
  2. Put the rice over it and spread it evenly.
  3. Spread the corn mixture evenly over it.
  4. Pour the tomato sauce and spread it evenly.
  5. Finally, top it with cheese and microwave on high for 2 minutes.
  6. Serve immediately.

If making this in an OTG, for how long and at what temperature should it be kept?

   You can bake in an pre-heated oven at 150 degree for 5 to 7 minutes.

I have no words to describe how awesome this recipe was.. Infact without the spinach layer also it tastes good.. The main star of the dish is the tomato sauce.. The creamy and smooth textures and flavours of the sauce make it an unstoppable and finger licking good dish..

It's a nutirious recipe but didnt enjoy cooking; thought the recipe photograped would be great if provided; atleast would give an idea of its appearance after being baked; another quick method of making such a rice would be sauteing onions, crushed corn, spinach,chilli, rice n finally adding milk n cream before serving.
