Ingredients

For The Roti
1/2 cup plain flour (maida)
1/4 cup whole wheat flour (gehun ka atta)
1 tsp oil
salt to taste
plain flour (maida) for rolling
butter for cooking

For Schezwan Noodle Stuffing
1/2 cup schezwan sauce
1/2 cup boiled hakka noodles
1 1/2 tbsp butter
1 tbsp finely chopped garlic (lehsun)
3/4 cup thinly sliced capsicum
1/2 cup thinly sliced carrots
3/4 cup shredded cabbage
salt to taste

Other Ingredients For Schezwan Noodle Frankie
2 tbsp red chilli sauce
8 tbsp shredded cabbage
6 tbsp sliced onions
8 tbsp grated processed cheese
4 tsp chaat masala for sprinkling
Method

For the roti

    For the roti
  1. Combine all the ingredients in a deep bowl and knead into a soft dough using enough water.
  2. Divide the dough into 4 equal portions and roll each portion into a 150 mm (6”) diameter circle using a little plain flour for rolling.
  3. Heat a non-stick tava (griddle) and cook the roti using a little butter till golden brown spots appear on both the sides.
  4. Repeat step 3 to make 3 more rotis. Keep aside.

  1. Heat the butter in a broad non-stick pan, add the garlic and sauté on medium flame for a few seconds.
  2. Add the capsicum, carrot and cabbage and sauté on a medium flame for 2 to 3 minutes.
  3. Add the schezwan sauce, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  4. Add the noodles and salt, toss well and cook on a medium flame for 1 minute, while stirring occasionally. Keep aside.

  1. Place a roti on a clean, and dry surface.
  2. Put ½ tbsp of chilli sauce and spread it evenly.
  3. Spread 2 tbsp of cabbage over it and 1½ tbsp of onions.
  4. Spread ½ cup of the prepared schezwan noodle stuffing and sprinkle 2 tbsp of cheese over it.
  5. Sprinkle 1 tsp of chaat masala over it and roll it up tightly.
  6. Repeat steps 1 to 5 to make 3 more frankies.
  7. Serve the schezwan noodle frankie immediately.

  2. Add 1 tsp of oil. This will prevent the noodles from sticking to each other while boiling.
  3. Add salt and mix well.
  4. Once the water starts boiling, add the noodles. 
  5. Mix well and cook on a medium flame for 8 to 10 minutes or till they are cooked while stirring occasionally. Read package instructions to know the exact boiling time.
  6. Remove from the flame and drain out all the excess water.
  7. Pour some cold water on the noodles to stop internal cooking.
  8. Let all the water drain out and ensure that the noodles do not contain any moisture.
  9. Pour 1 tsp of oil over it.
  10. Mix it gently. This will prevent the noodles from sticking together while we are prepping other ingredients. Keep aside.

what a combination of indo-chinese cuisine. I have eaten this at frankie stalls on mumbai roadside. Why not try it at home and enjoy hot hot during the monsoon. I loved the schezwan sauce combined with the noodles and onions and wrapped in a maida roti. A complete filling meal.
