We have divided the method of preparing aloo cheese frankie into 4-5 steps. To prepare roti for the roll, take plain flour, ghee and salt. Knead into a soft dough and roll into a roti, cook, cover and keep aside.

Next, to make potato rolls take mashed potatoes in a bowl, processed cheese, cornflour which will help binding all the ingredients together, add cornflour, garam masala, lemon juice and mix well. Divide and roll into a cylindrical shape, coat it in cornflour an deep-fry. Potato rolls for the frankie are ready.

Further, we have made onion mixture by adding chili powder and dried mango powder to onions and mix well. Also, we have made masala water. Take dried mango powder, chilli powder, garam masala and add water, mix well and keep aside.

Ingredients

For The Rotis
3/4 cup plain flour (maida)
1/2 tbsp oil
salt to taste
plain flour (maida) for rolling
oil for cooking

For The Potato Rolls
1 1/2 cups boiled , peeled and mashed potatoes
1/2 cup grated processed cheese
3 tbsp cornflour
2 tsp finely chopped green chillies
1/2 tsp garam masala
1 tsp lemon juice
salt to taste
cornflour for rolling
oil for deep-frying

To Be Mixed Into Masala Water
2 tbsp water
1/2 tsp chilli powder
1 tsp dried mango powder (amchur)
1/4 tsp garam masala
salt to taste

To Be Mixed Into An Onion Masala Mixture
1/2 cup chopped onions
1/2 tsp chilli powder
1/2 tsp dried mango powder (amchur)
salt to taste

6 tbsp grated processed cheese for sprinkling
Method

For the rotis

    For the rotis
  1. Combine all the ingredients in a deep bowl and knead into a soft dough using enough water.
  2. Divide the dough into 6 equal portions and roll each portion into a 125 mm. (6”) diameter circle using a little plain flour for rolling.
  3. Heat a non-stick tava (griddle) and cook each roti, using a little oil, till golden brown spots appear on both the sides. Keep aside.

For the potato rolls

  1. Combine all the ingredients in a deep bowl and mix well.
  2. Divide the mixture into 6 equal portions and roll each portion into a cylindrical roll.
  3. Roll them in cornflour till they are evenly coated form all the sides.
  4. Heat the oil in a deep non-stick kadhai and deep-fry, 3 rolls at a time, till they turn golden brown in colour from all the sides. Keep aside.

  1. Place a roti on a clean, dry surface and drizzle little masala water evenly over it.
  2. Place a potato roll in the centre, top with a little onion masala mixture, finally top it with 1 tbsp of cheese roll it up tightly and seal it with a toothpick.
  3. Repeat steps 1 and 2 to make 5 more frankies.
  4. Serve the aloo cheese frankie immediately.

This frankie is just so yum.. It tastes exactly like we get roadside in mumbai..These deep fried rolls changes the taste totally as the cheese in it melts and also other spices blend into each other.. Instead of putting the filling directly, you can try this new way of deep frying it..
