While making these homemade instant jalebi, remember to keep the syrup warm. Keep stirring the sugar syrup continuously till you reach 1 thread consistency. Do not over cook the sugar syrup. Also ensure that you immerse the jalebi in warm syrup immediately after frying so they soak the sugar syrup well. Do not over soak them. 2 to 3 minutes is enough.

Ingredients


For Instant Jalebi
1 cup plain flour (maida)
1 tbsp ghee
1 tsp fruit salt
3/4 cup water
oil or for frying

For The Sugar Syrup
2 cups sugar
1 cup water
1/4 tsp cardamom (elaichi) powder
orange food colour

For Garnish
1/2 tsp almond (badam) flakes for sprinkling
1/2 tsp crushed pistachios for sprinkling

Method

  1. To make instant jalebi, combine the sugar along with 1 cup of water, cardamom powder and orange food colour.
  2. Simmer on medium flame for 5 minutes till the syrup is of 1 string consistency.
  3. Remove from the fire and keep aside.

For the jalebis

  1. In a deep bowl add plain flour, ghee and eno, mix them using your fingertips.
  2. Gradually add water and make a smooth, lump free batter using your hands for mixing.
  3. Transfer the batter into a piping bag and cut a small tip or a thick cloth with a small hole in the center.

  1. Heat oil or ghee in broad pan, and press out round swirls of the batter in the hot ghee working closely from center to the outside of the whirl [approximately 50 mm. (2 inch) diameter].
  2. Deep fry the jalebis till golden brown and transfer into the warm sugar syrup.
  3. Drain immediately and serve the instant jalebis hot garnished with almonds and pistachios.

Can I fry these jalebi in the morning and soak them in sugar syrup in night before serving

   No, the jalebis will have to be added in the sugar syrup immediately for the syrup to coat well. You can drain from the syrup and keep and serve after some time.

   Hi, As the jalebis are soaked in sugar syrup, it will not stay for too long. it will last for few hours very crisp.. then slowly it will start getting soggy..

Can i use baking soda instead of baking powder?

   Hi Sanchita, No, you should''nt. Baking soda is 3 times more powerful than baking powder. It might affect the texture of your jalebis.
