What is golden syrup?

When sugar cane juice is refined into sugar by treating it with an acid, a thick amber coloured sugar syrup called golden syrup is created. Generally used as a sugar, honey or corn syrup substitute, this syrup is mostly considered to be sweeter than all three and is more expensive, found in gourmet stores and is also known as light treacle in the UK.

How to select golden syrup

• Golden syrup is commercially available in stores.
• This syrup is now available in smaller quantities in glass bottles.
• Golden syrup that is naturally light in colour is used for making candies.
• The darker version of the syrup is used for baking, so please choose accordingly.
• Check the 'best before date' before buying.

Culinary Uses of golden syrup

• Golden syrup is a popular sweetening ingredient in baked goods, candy, frostings, jams, jellies, etc.
• Golden syrup can be used to make cookies, rice crispies, caramel snack mixes, nutritional bars, ice creams and sorbets.
• It is a common ingredient for chocolates, fudges, cakes and biscuits.
• If you'd like to substitute light golden syrup, use equal parts of honey or corn syrup, which is made out of corn starch.
• If you'd like to substitute dark golden syrup, use equal parts molasses or maple syrup.

How to store golden syrup

• Since golden syrup is primarily composed of sucrose, fructose, and glucose, storing it is an easy option as there is no chance of crystallization.
• Store golden syrup in tightly sealed containers at room temperature or in the refrigerator.
