Description
Dhokla is a farsan or snack that has a very important place in every Guajarati household, and is now becoming increasingly popular around the world. Dhoklas are a steamed dish made from rice and protein-packed whole lentils like urad dal and gram/split chana dal. They are well suited for carrying on travel or in lunch boxes, and a good one-dish dinner as well!
As the name suggests, KhattaDhokla batter is a little sour in taste. This batter is made by combining soaked rice and urad dal in a proportion of 3:1 respectively, blending them till smooth, adding sour curds or sour buttermilk, salt and ginger-green chilli paste for taste, and then fermenting this batter for 8-10 hours. This fermented batter is then steamed to make KhattaDhoklas. This batter is also readily available in some shops.
How to Select
If buying from outside, take care that the batter is fresh and not over fermented or stale.

How to Store
Once the batter is fermented well, store in a refrigerator and use within 2-3 days.

The urad dal used in the batter contains a good amount of protein and is hence very beneficial.
Those with wheat allergies or gluten intolerance will find the dhokla a nice addition to their diets.
