What is strawberry pulp?




Strawberry pulp is the fruit pulp derived from strawberries. It is rich with Vitamin C and ranges from sweet to sweet tart in taste. The fragrantly sweet juiciness and deep red color of strawberries can brighten up both the taste and aesthetics of any meal; it is no wonder they are the most popular berry fruit in the world. Strawberry cultivars vary remarkably in size, color, flavor, shape, degree of fertility, season of ripening, liability to disease and constitution of plant.

To make strawberry pulp, combine 1 cup chopped strawberry and 1/2 cup water in a deep pan and boil for 7 to 8 minutes. Cool and blend in a mixer till smooth. This will yield approx. 1/2 cup pulp.

Strawberry pulp is often added to cocktails, such as Minute Maid, Strawberry passion. One cup (144 g) of strawberries contains approximately 45 calories (188 kJ) and is an excellent source of vitamin C and flavonoids.

How to select strawberry pulp



If you are pulping the strawberries at home than opt for a strawberry with red flesh that has yellow seeds piercing its surface, and the small, regal, green leafy cap and stem adorning its crown. Since strawberries, once picked, do not ripen further, avoid those that are dull in color or have green or yellow patches since they are likely to be sour and of inferior quality.

Medium-sized strawberries are often more flavorful than those that are excessively large. Packaged pulp cans and tetra paks should be checked for best before date and traces of leakages and bulging.

Culinary Uses of strawberry pulp



" Add pulped strawberries to mixed green salad, ice creams, sorbets and pies.
" Layer sliced strawberries, whole blueberries and plain yogurt along with strawberry pulp in a wine glass to make a parfait dessert.
" Mix strawberry pulp with cinnamon, lemon juice and maple syrup and serve as a topping for waffles and pancakes.
" Blend strawberry pulp with a little bit of orange juice and use as a refreshing coulis sauce that goes well with poached pears.
" Add strawberry pulp to breakfast shakes to give them a more vibrant taste and texture.

How to store strawberry pulp



Store the strawberry pulp in the refrigerator and use within 2-3 days. To freeze pulp, transfer the prepared pulp to a heavy plastic bag and return them to the freezer where they will keep for up to one year. Adding a bit of lemon juice to the pulp will help to preserve their color. While strawberries can be frozen whole, cut or crushed, they will retain a higher level of their vitamin C content if left whole.
