is the vada made out of this dal healthy? will vada alter the glycemic index ?

   Yes, the vada made with urad dal is healthy but if it is not fried. You can make the vada in an appe mould or on a tava or in a pan as done in the recipe of https://www.tarladalal.com/low-cal-dahi-vada--non--fried-snacks--33325r. For the glycemic index of cooked food the index will have to be measured separately.
