Ingredients

2 small cucumber , peeled and diced
2 cups thick curds (dahi)
8 spring onions , finely chopped
2 garlic (lehsun) cloves , minced
1/4 cup freshly chopped mint leaves (phudina) leaves
salt and freshly ground black pepper powder to taste

For The Garnish

Method
    Method
  1. In a small bowl, beat the yogurt until smooth.
  2. Fold in the garlic and spring onions. Add salt and pepper.
  3. Fold in the mint, then add the cucumber.
  4. Garnish with a tbsp of fresh chopped mint, if desired.
  5. Chill well before serving.
  6. Serve with crusty bread or pita bread triangles and raw vegetables.

  1. To remove excess moisture from the cucumber, salt the diced cucumber generously and place in a colander. Let it drain for 45 minutes to an hour, then rinse and pat dry.
