Method

  1. Preheat the oven to 350 f(180c or4g).
  2. Combine vegetable broth,garlic and parsley in a large soup pot.
  3. Bring to a boil,reduce the heat and simmer for about 25 mins.
  4. Season to taste with salt and pepper.
  5. Prepare the bread by brushing each side with oil. reserve 1 to 2 tbsps oil for sauteing the garlic.
  6. Place the bread on the baking sheet and toast in the oven for 5 minutes on each side or until golden brown.
  7. Heat the remaining olive oil in a skillet and sautee the peeled garlic cloves in oil until golden brown.
  8. Discard the garlic.stir the paprika and cumin into the hot oil and remove the skillet immediately from heat.
  9. Add the spiced oil to the soup pot and simmer briefly.
  10. Taste and correct seasoning.
  11. Break up the toasted bread and put it into individual soup bowls.
  12. Pour the hot garlic broth over the bread.
  13. Garnish with additional parsley and paprika.
  14. Serve immediately.
