Green Gazpacho

Traditional gazpacho is a tomato-based soup with garlic, onions, peppers, and cucumbers. This beautiful green variation leaves out the tomato, but retains the fresh taste of all the vegetables. This soup can be stored in the refrigerator for up to 2 days.

Ingredients


2 peeled and cored cucumbers
1 celery (ajmoda) stalk
2 capsicums
1 stalk spring onion
1 small clove garlic (lehsun)
1/2 ltr vegetable stock
salt to taste
freshly ground black pepper (kalimirch) to taste
a few leaves of sage and chopped cucumber for the garnish

Method
    Main procedure
  1. Roughly chop the celery and bell peppers. In a blender, mix the cucumbers, celery, bell peppers, garlic and sage. Blend to a smooth purée along with the vegetable stock.
  2. Add the salt and pepper and mix well. Add a little stock, if required to thin out the gazpacho.
  3. Serve chilled garnished with the sage leaves and chopped cucumber.
