Main procedure- In a pan combine the pineapple, ginger and sugar with ¼ cup water and bring to a boil. Simmer for a few minutes till the pineapple has softened a little. Cool completely and then chill.
- When you wish to serve, assemble 2 glasses - beginning with the cooked pineapple and ginger mixture and the layers of the crumbled ginger biscuits and ice-cream.
