  1. Combine the carrot, ¼ cup of cheese, butter, tomato ketchup and salt and mix well. Keep aside.
  2. Divide the mixture into 4 equal portions. Spread a portion of the mixture on each bread slice, spread it evenly over it.
  3. Sprinkle the remaining cheese evenly over it.
  4. Bake it in a pre-heated oven at 200° c (400°f) for 10 minutes.
  5. Cut each toast into 3 equal pieces.
  6. Serve immediately.

These toast are my favourite.. The carrot having a slight sweet and buttery taste.. with a cheesy layer on top.. is just perfect for an evening snack.. This is definitely going to be loved by the kids.. I am going to try it one more time..
