The Chinese Five-Spice Powder is an essential ingredient in the Oriental kitchen. Used commonly in Chinese and Taiwanese cooking, this spice-mix combines five basic flavours, namely sweet, sour, bitter, salty and umami (a special savoury taste that is considered part of the five basic flavours in Oriental cuisine).

The strong flavours of the whole spices is especially good in this homemade version, as compared to commercially-prepared store-bought ones. You can make it in small batches and store in a dry, airtight container in a cool and dry place, to retain the flavour and aroma.

  1. Combine all the ingredients in a broad non-stick pan and dry roast on a slow flame for 4 to 5 minutes, while stirring continuously. Keep aside to cool.
  2. Grind in a mixer to a smooth fine powder.
  3. Store it in an air-tight container and use as required.

10 cinnamon sticks? What sort of a measure is that for a cook? What size stick, for bog''s sake specify something, length, volumetric measure, weight..
