Think of all that your favourite chaat-wallah would put into a Bhel Puri , ranging from onions, raw mango and tomatoes to peppy spice powders, chutneys and of course, sev. Toss them all together with cooked sweet corn and voila, you have an adventurous snack that will tickle your taste buds!

Ingredients

2 cups cooked sweet corn kernels (makai ke dane)
1/2 cup chopped onions
1/4 cup deseeded and finely chopped tomatoes
1/4 cup pomegranate (anar)
2 tbsp green chutney
1/4 cup sweet chutney
1 tsp chaat masala
1 1/2 tsp lemon juice
1 tsp chilli powder
2 tbsp finely chopped raw mango
1/4 cup finely chopped coriander (dhania)
1/2 cup coarsely crushed papadis
salt to taste

For The Garnish
1/4 cup sev

  1. Combine all the ingredients in a deep bowl and mix well.
  2. Serve immediately garnished with sev.

Recipe Notes:

  1. We are using fresh corn kernels but, you can use frozen or canned corn kernels depending upon the availability.
  2. American sweet corn kernels are preferable as they lend a natural sweetness to the corn bhel recipe.
  3. Apart from onions and tomatoes, you can even add boiled potatoes, grated beetroot or carrot to make the corn chaat tastier.
  4. Also, you can add garlic chutney to the corn bhel. The green chutney and sweet chutney can be prepared prior to making the corn bhel.

How to make corn bhel:

  1. To prepare the fresh corn bhel, in a deep bowl, take 2 cups cooked sweet corn kernels. If using fresh corn then remove the kernels from the knob. You can either cook the sweet corn kernels in a microwave or a pressure cooker.   2. Add chopped onions. If you are jain then skip adding them.
  3. Next, add the finely chopped tomatoes. Before adding, we have deseeded them which is totally optional.
  4. Add the pomegranate. They not only provide a pleasant sweetness to the corn bhel but, also add a nice crunch.
  5. Add the green chutney. Our website has many recipes for green chutney but, this green chutney with mint is ideal for this corn chaat recipe.
  6. Add the sweet chutney. Refer our recipe with detailed step by step photos to make homemade khajur imli ki chutney
  7. Add the chaat masala and lemon juice. It provides a tangy flavor to the corn bhel.
  8. Add the chilli powder. Also, you can add finely chopped green chillies if you want spicier. Adjust the quantity as per your preference, skip adding if making for kids.
  9. Add the chopped raw mango and coriander.

  11. Add salt to taste. Be cautious as we have already added salt in corn while boiling and also, chaat masala is a bit salty.
  12. Combine all the ingredients and mix well and our fresh corn bhel is ready!
  13. Serve the corn chaat immediately garnished with sev.

Tarla aunty ,thanks for the wonderfully simple and healthy combination. I used to pressure cook sweet corn with nearly the same ingredients. Your version is tastier and fancier looking.
