Unlike most savouries, which combine corn with boiled potatoes, here the potatoes are used in grated form, so you can see golden coloured slivers of crispy potatoes and tiny corn kernels all over the deep-fried snack. This gives the crispy aloo corn pakoda an irresistible appearance, while grated onions and green chillies give it a tantalizing flavour.

The Indian spices once again highlight their magic in these potato onion corn fritters and the coriander adds on to lend a pleasing herby flavour. Serve them with tomato ketchup and green chutney.

Make sure you fry the Indian sweetcorn potato fritters as soon as the ingredients are mixed; otherwise the batter will release water. This will make the fritters to become soggy and disintegrate while frying.

Tips to make corn and potato fritters. 1. Do not grate and keep potato for a longer time as it turns black. 2. You can store the fritters mixture in the fridge for a day or so and fry when needed. 3. Use boiled corns only, otherwise the fritters will remain uncooked from inside.
