This chunky Mexican Tomato Sauce is an exciting combination of tomatoes and onions, flavoured with spice powders and herbs. It is used in baked dishes, and may even be served as a dips with nacho chips or other crunchies.

1 1/2 cups blanched , peeled and chopped tomatoes
1 tbsp oil
1/2 cup finely chopped onions
1 tsp finely chopped green chillies
1/2 tsp chilli powder
1/2 tsp dried oregano
2 pinches of sugar
salt to taste

  1. Heat the oil in a broad non-stick pan, add the onions and green chillies and sauté on a medium flame for 1 minute.
  2. Add the tomatoes, chilli powder, oregano, sugar and salt, mix well and cook on a medium flame for 4 minutes, while stirring occasionally.
  3. Use as required.
