Brocolli Open Sandwich recipe - How to make Brocolli Open Sandwich

Preparation Time:    Cooking Time:    Total Time:     4Makes 3 to 4 servings

Ingredients

6 slices of whole wheat bread
butter to taste
3 tbsp mint-coriander chutney
grated processed cheese as required

For The Stuffing
2 tsp oil
2 tbsp chopped spring onions whites
1 1/2 tsp garlic (lehsun) paste
1 tsp turmeric powder (haldi)
2 tsp ginger-green chilli paste
3 tbsp chopped broccoli
1 tbsp grated paneer (cottage cheese)
1 tbsp grated carrot
1 1/2 tbsp quick cooking rolled oats
2 tbsp boiled and mashed potatoes
1 tbsp yellow moong dal (split yellow gram) , boiled
salt to taste
1 tsp cumin seeds (jeera)
1 tbsp chopped coriander (dhania)
1 tbsp green peas

For Serving
tomato ketchup
mint-coriander chutney

Method
For the stuffing

    For the stuffing
  1. Heat oil in a pan and add the cumin seeds.
  2. When the seeds crackle, add the garlic paste, spring onions and turmeric and saute for 1 minute.
  3. Add the ginger-chilli paste and sauté for 2 minutes.
  4. Add the broccoli, carrots, oats, moong dal, salt, green peas, mix well and cook for 2 to 3 minutes.
  5. Add the potatoes and coriander, mix well and remove from flame. Keep aside to cool.

How to proceed

  1. Apply butter on each slice and keep aside.
  2. Apply a little mint-coriander chutney on one side of each slice and spread stuffing evenly on each bread slice.
  3. Sprinkle some grated cheese and cook on a non-stick tawa till golden brown and crisp.
  4. Serve hot with tomato ketchup and chutney.
