Cucumber Cheese Sandwich ( Tiffin Treats) recipe with step by step photos
Method-
For making the Cucumber Cheese Sandwich (Cucumber Sandwich), clean and wash a cucumber.

Peel the skin with the help of a peeler and discard it. You can keep the peels intact as they are rich in fiber but if doing so, ensure the cucumbers are organic and pesticide free.

Cut the cucumber into thin slices using a sharp knife or a mandolin.

Trim the edges of all the bread slices and keep aside. We have made use of whole wheat bread but, you can use any type of bread – white, masala, multigrain. Also, trimming the edges is optional. Don’t discard the trimmings, you can use them to make the sandwich chutney or breadcrumbs later.

Apply ½ tbsp of cheese spread on each bread slice. In fact, cucumber complements mayonnaise and cream cheese well too. If you don’t have cheese spread then make use of cheese slice or grated cheese to make the Cucumber Cheese Sandwich.

Place 2 bread slices on a clean, dry surface with the cheese spread side facing upwards.

Arrange 6 cucumber slices over one bread slice.

Sandwich it with another bread slice, with the cheese spread side facing downwards.

Cut the Cucumber Cheese Sandwich (Cucumber Sandwich) diagonally into 2 triangles. You can sprinkle little salt and pepper if you like but, since cheese spread is quite salty we haven’t added any.

Repeat steps 6 to 9 to make 3 more Cucumber Cheese Sandwiches.

If you wish to pack it for lunch, then wrap the Cucumber Cheese Sandwich (Cucumber Sandwich) in an aluminium foil, and pack in an air-tight tiffin box.
