Ingredients

to be blended into a smooth paste
1 cup roughly chopped coriander (dhania)
1 cup mint leaves (phudina)
4 garlic (lehsun) cloves
1 tsp grated ginger (adrak)
4 tbsp butter

Other Ingredients
4 to 6 potatoes , cut lengthwise
2 tsp oil
2 onions , chopped
2 tomatoes , chopped
1/2 cup chopped french beans
1/2 cup green peas
1/2 cup boiled sweet corn kernels (makai ka dana)
1 medium carrot , grated
1 tsp chat masala
1/2 tsp cumin seeds (jeera) powder
salt to taste
1/2 tsp turmeric powder (haldi)
6 tbsp grated processed cheese
3 tbsp lemon juice

Method
    Method
  1. Wash and Parboil potatoes with skin. When cool, halve lengthwise, scoop out the potatoes leaving thick shells. Keep aside.
  2. Grate remaining scooped out potatoes.
  3. Heat oil in a pan. Saute onions till it turns golden brown in colour.
  4. Add the chopped tomatoes, smooth paste and saute well .
  5. Add the vegetables and the grated potatoes and fry for few minutes till half cooked.
  6. Add the chat masala ,cumin seeds powder, salt, turmeric powder and fry well.
  7. Add lemon juice and remove from fire.
  8. Place a little of this cooked mixture into the prepared potato shells.
  9. Sprinkle cheese on the fillings and dot with butter.
  10. Place the potato boats on a baking tray and bake under a grill for 10 minutes or till done..
  11. Serve hot with green chutney.
