Of these, Bhapa Doi is a rich and sweet curd-based dessert, which is perfect to end a meal. While it is usually made with full-fat milk sweetened with lots of sugar, we have come up with a pleasantly sweet version made using cow’s milk and minimal sugar.

  1. Combine the milk and sugar in a deep non-stick pan, mix well and boil on a medium flame for 8 to 10 minutes, while stirring occasionally.
  2. Cool slightly for approx. 10 minutes, while stirring occasionally.
  3. Combine the curds and cardamom powder in a deep bowl and whisk well.
  4. Pour the milk-sugar mixture in it and whisk very well.
  5. Pour the mixture into 8 individual cups or bowls, cover with a lid and keep aside in a warm place for atleast 8 to 10 hours or till set.
  6. Refrigerate for atleast 1 hour and serve chilled.

Hello!, I would like to know: 1. Can the sugar be whisked into the curds,along with elaichi powder and used for adding to the milk for curd setting. 2. If I want to add fresh fruits to this recipe, when can it be added. Thanking in advance.

   Hi Devasena, You can add the sugar into the curds,along with elaichi powder and use for adding to the milk for curd setting. You can use fruits to top the curd once it is set!

This tasted like sweet curds. Loved the flavour and when set in separate serving bowls they look attractive too!
