Nutritious Noodles recipe - How to make Nutritious Noodles

  1. Place the noodles in a large bowl.
  2. Boil 1 litre of water with a little salt in a broad pan and pour it over the raw rice noodles. Cover and keep aside for 10 minutes or till the noodles are soft. Drain and keep aside.
  3. Heat the oil in a non-stick pan, add the garlic paste, red chilli, spring onions, French beans, carrots, mushrooms and celery and sauté for 2 to 3 minutes.
  4. Add the noodles, bean sprouts, peanuts, soya sauce, sugar, lemon juice, salt and pepper and toss well. Sprinkle 1 tablespoon of water if required to moisten the noodles.
  5. Serve immediately.

the noodles turned out to be the highlight of the evening as all the guests loved them. The quantity was a bit short and also I left out the mushrooms as I wasn't very fond of them. But in totality it turned out to be a very tasty and healthy dish which could be had at any point in the day .
