Penne arrabiata is a classic Italian pasta recipe. A thick sauce of tomato, garlic, basil leaves and fresh cream is tossed in with penne pasta and topped with grated cheese. Serve it with warm garlic bread to make a satiating meal.
With just a handful of ingredients, you can cook a very rich and creamy vegetarian white sauce pasta recipe. The milk and cheese are good sources of protein and calcium while the addition of vegetable supplements this recipe with iron, folic acid and fibre.

Italian rice used for risotto is a round, short-grained variety with a nutty flavour. Arborio rice is the very best kind to use. The rice is cooked in a stock with loads of herbs, garlic and onion. You can even add vegetables to it which would give a nice crunch to the dish.

Pasta is another authentic Italian dish. There are two types of pasta – fresh and dry. You have to boil both of them till al dente that is cooked to be firm to the bite. Few things you have to keep in mind are boil plenty of water in a large pan with salt and oil. Cook uncovered, stirring occasionally and gently until the pasta is tender.

Immediately drain the cooked pasta into a sieve or a colander. Transfer to a bowl of cold water to refresh it which stops the cooking process. Also, if you are not using them immediately then drizzle some oil and toss gently.
