Spinach and Ricotta Pie

Ingredients


For The Crust
1/2 recipe wholemeal pizza base

For The Filling
2 cups finely chopped spinach (palak)
1 cup ricotta cheese or paneer (cottage cheese)
1/4 cup chopped onions
2 garlic (lehsun) cloves , chopped
1 tbsp raisins (kismis)
1/2 cup grated processed cheese
1/4 cup milk
a pinch of nutmeg (jaiphal) powder
1 tbsp olive oil
salt and to taste

For Glazing
2 tbsp milk
1 tbsp butter

Method
For the filling

  1. Heat the olive oil in a pan and sauté the onion till it turns translucent.
  2. Add the garlic and sauté for one minute.
  3. Add the spinach and sauté for a further 5 minutes.
  4. Add the ricotta cheese, raisins, cheese and milk and mix well. Season with salt, pepper and nutmeg. Keep aside.

  1. Roll the dough into 200 mm. (8”) diameter circle.
  2. Press the circle into a pie dish and prick with a fork on the bottom and sides.
  3. Bake in a pre-heated oven at 180°c (360°f) for 10 to 12 minutes.
  4. Pour the filling over the baked pie and spread it evenly over it.
  5. Bake in a pre-heated oven at 200°c (400°f for 10 minutes.
  6. Remove from the oven and glaze with the butter.
  7. Cut into wedges and serve hot
