Ingredients


For The Tomato Red Wine Sauce
1/2 cup tomato pulp
1 1/2 tbsp olive oil
1/4 cup finely chopped onions
1 tbsp finely chopped garlic (lehsun)
1 tbsp tomato pulp
1/4 tsp sugar
1/2 tsp dried oregano
2 tbsp cream
salt to taste
2 tbsp red wine

To Be Mixed Together For The Batter
1/2 cup plain flour (maida)
1/4 cup cornflour
1/2 tsp dried oregano
1/2 tsp dry red chilli flakes (paprika)
salt to taste
1/2 cup water

Other Ingredients
250 gms mozzarella cheese
2 cups dry bread crumbs
oil for deep frying

Method
For the tomato red wine sauce

  1. Heat the oil in a broad non-stick pan, add the onions and garlic and sauté on a medium flame, till the onions turn translucent.
  2. Add the tomato pulp, mix well and cook till the sauce becomes thick.
  3. Add the tomato puree, sugar, salt, ½ cup water, mix well and bring to boil.
  4. Add the oregano and cream, mix well and cook for 1 minute.
  5. Add the wine, mix well and remove from the flame and keep aside.

For the cheese sticks

  1. Cut the mozzarella cheese into sticks and keep them in the freezer for 10 minutes.
  2. Dip each cheese stick in the prepared batter and coat them evenly with bread crumbs evenly from all the sides to form a thick layer, pressing them firmly.
  3. Refrigerate for 30 minutes.
  4. Heat the oil in a kadhai and deep fry each stick till they turn golden brown from all the sides.
  5. Drain on an absorbent paper.
  6. Serve hot with tomato red wine sauce.
