Bring all the sides together to seal it, and roll again to form a ball. Roll each ball in bread crumbs till they are evenly coated from all the sides. Heat the oil in a deep non-stick pan, deep fry a few balls at a time, on a medium flame till they turn golden brown in colour from all the sides. Drain on an absorbent paper. Serve the broccoli cheese balls immediately.

10 small mozzarella cheese cubes
1 tbsp oil
1/2 cup finely chopped onions
1 tsp finely chopped garlic (lehsun)
2 tsp finely chopped green chillies
2 tbsp cornflour
3/4 cup boiled , peeled and mashed potatoes
salt to taste
bread crumbs for rolling
oil for deep-frying

  1. Broccoli Cheese Balls. Cheese balls is one appetizer that is loved by everyone equally, be it kids or adults. You can make so many variations of this deep-fried snack by tweaking the ingredients here and there. Below are some of my favorite cheesy balls recipe:

  1. heat the oil in a broad non-stick pan. You can even make use of butter for cooking the mixture.
  2. Once the oil is moderately hot, add the onions.
  3. Also, add the garlic. Ensure everything is chopped finely so, the broccoli cheese mixture can be combined easily to form a ball.
  4. Furthermore, add the green chillies and sauté on a medium flame for 2 minutes or till everything is light brown and aromatic. You can also add chilli flakes instead of green chillies.
  5. Add the broccoli. We have taken a broccoli head and chopped it very finely before adding. Alternatively, you can even steam the broccoli until slightly softened and then mix together all the ingredients.
  6. Mix well and cook on a medium flame for 4 minutes, while stirring occasionally. You will notice the broccoli has changed colour and turned soft.
  7. Transfer into a deep bowl and cool slightly.
  8. Add the cornflour. It helps in binding together all the ingredients for the Broccoli Cheese Balls.
  9. Add the potatoes and salt. You can even grate the potatoes to get a smooth mixture. Also, ensure the potatoes have less moisture so, they soak least amount of oil while frying.
  10. Mix well and our mixture for cheesy broccoli balls is ready.
  11. Divide the broccoli cheese ball mixture into 10 equal portions.
  12. Shape a portion into a ball.
  13. Flatten between your palms lightly.
  14. Press a little in the center to make a depression.
  15. Place a cheese cube in the center of the round. We have used mozzarella cheese here but you can even use Cheddar or any melting, tasty cheese instead.
  16. Bring all the sides together to seal it and roll again to form a ball.
  17. Roll the ball in bread crumbs till it is evenly coated from all the sides. Panko crumbs can also be used for coating the broccoli and cheese balls.
  18. Repeat step 12 to 17 to make 9 more Broccoli Cheese Balls.
  19. Heat the oil in a deep non-stick pan.
  20. Once the oil is hot, carefully slide in a few broccoli cheese balls. Do not overcrowd the pan or else the cheesy broccoli balls will stick to each other resulting into breaking.
  21. Deep fry the Broccoli Cheese Balls on a medium flame till they turn golden brown in colour from all the sides. If you fry them on a high flame, they will immediately turn darker in shade but, the cheese cube inside would not melt.
  22. Drain the Broccoli Cheese Balls on an absorbent paper.

Love the recipe but don't like the 'deep fry' part. Is there a way to bake the balls without frying them in oil?

   Avoid the breadcrumbs in rolling and instead shape them like tikkis and cook them on a non-stick tava using little oil on a medium flame. Do not bake them.
