Stretch the dough using both the hands and knead well again. Tap the dough with your fingers and spread it to make a 250 mm. X 200 mm. (10” x 8”) diameter oval shape. Roll the dough to make a 200 mm. (8”) long cylindrical roll and pinch the edge of the rolls so as to seal it properly. Place the dough in a greased bread loaf tin. Cover it with a dry muslin cloth and again keep aside in a warm place to rise for 30 minutes. Bake it in a pre-heated oven at 200°c (400°f) for 10 minutes. Lower the temperature to 180°c (360°f) and bake it for 20 minutes. Cool slightly. De-mould the loaf from the tin and brush the bread loaf with butter and keep aside to cool completely. Once the bread loaf has cooled completely, cut it into 13 mm. (½”) bread slices. Serve or use as required.

  2. To this add 2 tbsp sugar. This is the food for the yeast. 
  3. Add ¼ cup of warm water in a bowl and mix well. This warm water helps in the activation of yeast. 
  4. Cover it with a lid and keep aside for 10 minutes.

  2. Add ¾ tsp of salt. We recommend you use the measured quantity if salt for making the bread dough.  
  3. Add the prepared yeast-sugar mixture. Do not mix it before adding. 
  4. Mix well using your fingertips. 
  5. Knead into a soft and loose dough using enough warm water. Use of warm water helps the dough rise perfectly. Remember to add water gradually. You will realise that the dough sticks to your fingers but as you keep kneading it will leave your fingers. It will also leave the sides of the bowl. This is an indication that the dough is ready. Finally, the dough has to be smooth in texture. 
  6. Add soft butter.
  7. Knead again very well till the dough is smooth and elastic. You have to knead till all the butter has been mixed with the dough very well. This might take 1 to 2 minutes. The better you knead the dough at this stage, that soft the basic white bread loaf using yeast will be after baking. 
  8. Grease both your hands with very little butter. 
  9. Take the dough in your hand and shape the dough into a proper round using both your hands while tucking the edges at the bottom.
  10. Cover it with a dry muslin cloth and keep aside in a warm place to use for 45 minutes or till the dough is double in size.
  11. Deflate the dough of homemade bread by pressing it lightly with your fingers. This is to remove the excess air from the dough. 
  12. Sprinkle some plain flour over a smooth, flat surface. This can be a big chopping board or even your kitchen platform. 
  13. Place the dough over it.
  14. Knead it very well. If the dough is getting sticky while kneading, then sprinkle little plain flour as required. This kneading is again important for a soft and fluffy bread. 
  15. Stretch the dough using both the hands so the dough becomes airy and it turns out to be fluffy.
  16. Knead well again.
  17. Tap the dough with your fingers and spread it to make a 250 mm. X 200 mm. (10” x 8”) diameter oval shape.
  18. Roll the dough to make a 200 mm. (8”) long cylindrical roll and pinch the edge of the rolls so as to seal it properly. This is to ensure that you a bread with even texture.

  1. Grease a 200 mm. (8”) tin with little butter. This will help in demoulding of bread. Ensure that you grease the tin from all the sides well. 
  2. Place the dough in the greased bread loaf tin with the pinched side facing downwards. 
  3. If you notice that there are empty spaces around the circumference of the dough, lightly pat it and spread it to fill the spaces.
  4. This is how to dough is evenly spread in the tin.  
  5. Cover it with a dry muslin cloth and again keep aside in a warm place to rise for 30 minutes.
  6. This is how to dough of easy perfect yeast bread looks like after rising. 
  7. Bake it in a pre-heated oven at 200°C (400°F) for 10 minutes.
  8. Lower the temperature to 180°C (360°F) and bake it for 20 minutes. Cool slightly for about 5 minutes.
  9. De-mould the loaf from the tin by inverting it on a chopping board. You can tap the tin gently. If you yet find difficulty in demoulding, you can loosen the edges with a knife. 
  10. Turn the bread upside down and place it on the chopping board. 
  11. Brush the bread loaf with little butter to make it more soft and keep aside to cool completely.
  12. Once the bread loaf has cooled completely, cut it into 13 mm. (½”) bread slices using a bread knife. Cut the slices very gently as the bread is very soft. 
  13. Serve homemade bread or use as required. This will stay fresh for 2 to 3 days at room temperature and then 2 days in the refrigerator.

If the recipe says instant yeast, why was it proofed and not added to the flour directly?

   Sometimes proofing the yeast before is helpful, we come to know whether the yeast is fresh or died, if you add directly add to the flour sometimes the ingredients go wasted if the yeast is died. So in this case we are on the safer side.

I am a doctor by profession, 64 years of age. I always wanted to bake a bread by my own. Not having culinary experience I just browsed and found the perfect recipe for making eggless white bread. Why does it crack from top?

   This may be due to 2 reasons: Firstly, the bread may have less water. Secondly, it is possible that the bread was over proofed.

   Yes I did it keep it a little longer than the first 45 minutes and the second 30 minutes resting time. That could be the reason.

   While baking you must bake it on a baking mode with both upper and bottom coil on. Please check it.
