Jini dosa is a popular Mumbai street food that originated from Ghatkopar area in Mumbai. Jini means small in Gujarati. Hence we have the dosa called Mumbai street food jini dosa.

Buttery and cheesy Jini Dosa is the Mumbai roadside vendor’s answer to pizza! Dosas cooked in butter are topped with a succulent and spicy mixture of veggies, which is also cooked in butter!

I would like to share with you some tips to make the perfect jini dosa recipe. 1. To get crispier dosas, you can add some rice flour to the batter and mix well. 2. The dosa batter should be at room temperature always. 3. When you pour the batter, the tava should not be very hot or else you won’t be able to spread the dosa nicely so, sprinkle water to lower the temperature of the tava and wipe the water with a cloth.

For The Jini Dosa
2 cups dosa batter
4 tbsp butter
4 tbsp finely chopped onions
2 tbsp finely chopped cabbage
2 tbsp finely chopped capsicum
4 tbsp finely chopped tomatoes
4 tsp chilli garlic (lehsun) paste
1 tsp chilli powder
1 tsp pav bhaji masala
salt to taste
4 tbsp finely chopped coriander (dhania)
8 tbsp grated processed cheese

For The Garnish
4 tbsp grated processed cheese
2 tsp finely chopped coriander (dhania)

For Serving
coconut chutney
sambar

Method
For the jini dosa

    For the jini dosa
  1. To make jini dosa, heat a non-stick tava (griddle), sprinkle a little water on it (it should sizzle immediately) and wipe off using a piece of cloth or a tissue paper.
  2. Pour a big ladleful of the batter on the tava (griddle) and spread in a circular motion to make a 200 mm. (8”) diameter circle.
  3. Spread ½ tbsp of butter evenly over it and cook on a medium flame for 2 minutes.
  4. Add 1 tbsp of onions, ½ tbsp capsicum, ½ tbsp cabbage, 1 tbsp tomatoes, 1 tsp red chilli paste, 1 tbsp tomato ketchup, ¼ tsp chilli powder, ¼ tsp pav bhaji masala, 1 tbsp coriander, salt and ½ tbsp butter.
  5. Mix well using a flat ladle and and spread the mixture on the entire dosa. Then mash it very lightly using a potato masher and cook on a medium flame for 1 to 2 minutes.
  6. Cut into 4 equal strips vertically using a pizza cutter.
  7. Sprinkle 2 tbsp of cheese evenly over it and cook for 1 minute.
  8. Roll each strip tightly and place in a serving plate.
  9. Garnish with cheese and coriander.
  10. Repeat steps 1 to 9 to make 3 more dosas.
  11. Serve the jini dosa immediately with coconut chutney and sambar.

  2. The dosa batter should be at room temperature always. So if you have stored the batter in the refrigerator, remove it and keep outside at least half an hour before making the dosas.
  3. Also, you can add 1 tsp of sugar to the dosa batter to get perfectly brown dosa.

  5. Also, before making the dosas, season the tava. Grease the tava uniformly with very little oil or butter. Now sprinkle the water and wipe it off. The fat layer will form a protective layer which will prevent the dosa from sticking to the tava.
  6. If you are finding it difficult to scrape out the dosa from the pan once it's ready, you can avoid it, by rubbing some raw onion to the pan before pouring the batter. This gives a non-sticky effect to the pan!

  5. Put 1/2 tbsp of butter and cook on a medium flame for 1 to 2 minutes or till the dosa turns light brown in colour.
  6. Add 1/2 tbsp capsicum. For a colorful stuffing, add bell peppers.
  7. Add the cabbage.
  8. Add 1 tbsp of tomatoes.
  9. Add 1 tsp red chilli paste. Jains can make use of only chilli paste. Alternatively, you can also add Schezwan Sauce.
  10. Add 1 tbsp tomato ketchup. it gives a nice sweet taste to the stuffing.
  11. Add ¼ tsp of chilli powder. Add more or less to suit your taste buds.
  12. Add ¼ tsp of pav bhaji masala. You can also add garam masala if pav bhaji masala is not handy.
  13. Add 1 tbsp coriander.
  14. Add salt to taste.
  15. Add 1/2 tbsp butter. it help to mix well and give extra butery taste.
  16. Mix well using a flat ladle and and spread the mixture on the entire dosa. Then mash it very lightly using a potato masher and cook on a medium flame for 1 to 2 minutes.
  17. Cut into 4 equal strips vertically using a pizza cutter.
  18. Sprinkle ¼ cup of cheese and cook on a medium flame for 1 minute. You can swap processed cheese with mozzarella or cheddar cheese for a more cheesy dosa. Also, grate more cheese over jini dosa if you wish to.
  19. Roll each portion tightly and our street-style jini dosa is ready.
  20. Repeat steps 1 to 17 to make 3 more Mumbai roadside jini dosas.

It was disaster because your written recipe and video recipe are absolutely 2 different recipes. Why? I tried making it as per video and it didn''t turn out good. Please correct the video recipe.
