Ingredients


To Be Mixed Into A Stuffing
1 cup grated paneer (cottage cheese)
3/4 cup finely chopped cabbage
2 tbsp finely chopped coriander (dhania)
1 1/2 tsp finely chopped green chillies
salt to taste

For The Dough
1 1/4 cups whole wheat flour (gehun ka atta)
1 tbsp ghee
salt to taste

For the dough

    For the dough
  1. Combine all the ingredients in a deep bowl and knead into a semi-soft dough using enough water.
  2. Divide the dough into 6 equal portions. Keep aside.

  1. To make paneer paratha, divide the stuffing into 6 equal portions.
  2. Roll a portion of the dough into a 75 mm. (3”) diameter circle using a little whole wheat flour for rolling.
  3. Place a little stuffing in the centre of the circle.
  4. Bring together all the sides in the centre and seal tightly.
  5. Roll again into a circle of 125 mm. (5”) diameter circle using a little whole wheat flour for rolling.
  6. Heat a non-stick tava (griddle) and cook the paratha using a little ghee until golden brown spots appear on both the sides.
  7. Repeat with the remaining dough and stuffing to make 5 more parathas.
  8. Serve the paneer paratha immediately.

  5. Knead into a semi-soft dough.
  6. Cover and keep aside.
  7. Divide dough into 6 equal balls.

  2. Dust a rolling board with flour.
  3. Faltten the dough on a rolling board and dust with flour. 
  4. Roll a portion of the dough into a 75 mm. (3”) diameter circle using a little whole wheat flour for rolling.
  5. Place a little stuffing in the centre of the circle.
  6. Bring together all the sides in the centre and seal tightly.
  7. Flatten the dough.
  8. Roll again into a circle of 125 mm. (5”) diameter circle using a little whole wheat flour for rolling.
  9. Heat a non stick pan and grease with ghee. 
  10. Put the uncooked paratha on the tava. 
  11. Cook on medium heat for 30 to 45 seconds. 
  12. Brush the top with ghee. 
  13. Flip over.
  14. Cook the other side the same way and use a spatula to press down to cook the paratha evenly.  
  15. Flip and cook till golden brown. Your paratha is ready.
