paushtik paratha is made from a dough of whole wheat flour, besan to which palak, carrots, curds and green chilli paste is added. The dough is then divided into 15 portions and cooked on a non stick tawa to make healthy paushtic paratha.

For Paushtic Parathas
1 cup finely chopped spinach (palak)
1/4 cup grated carrot
1 1/2 cups whole wheat flour (gehun ka atta)
1/4 cup besan (bengal gram flour)
4 tbsp curd (dahi)
2 tsp green chilli paste
1 tsp oil
salt to taste

3 3/4 tsp oil for cooking

  1. To make paushtic parathas, combine all the ingredients in a bowl and knead into a semi-soft dough using enough water.
  2. Divide the dough into 15 equal portions.
  3. Roll out each portion into a 100 mm. (4”) diameter thick circle using a little wheat flour for rolling.
  4. Fold into half to make a semi-circle and again fold into half to make a 100 mm. (4”) length triangular paratha.
  5. Heat a non-stick tava (griddle) and cook it, using ¼ tsp of oil, till brown spots appear on both the sides.
  6. Repeat steps 3 to 5 to make 14 more paushtic parathas.
  7. Serve the paushtic parathas hot with fresh curds.

Dough for paushtic paratha

  1. For preparing the dough for paushtic paratha, take a bunch of spinach.
  2. Remove the thick stem and discard it. Separate the fresh, green leaves aside.
  3. Finely chop the spinach leaves using a sharp knife.
  4. Peel a carrot and discard the skin.
  5. Grate the carrot using a grater and keep aside.
  6. To make the nutritious paratha dough, in a deep bowl, add the whole wheat flour.
  7. Add the besan. Nachni flour, oats flour, jowar or bajra flour can also be used to make the paushtic parantha.
  8. Add the chopped palak. You can use any veggies of your choice like grated beetroot, cabbage, cauliflower etc. Also, you can add chopped methi, capsicum, onions or tomatoes to the healthy paratha dough.
  9. Add the freshly grated carrot. Make sure that all the veggies are either finely chopped or grated. This helps in rolling the nutritious paratha easily.

  11. Add the green chilli paste. We prepare and keep in an air-tight container. Increase or decrease the spice as per your prefernce.
  12. Add the oil and salt.
  13. Combine all the ingredients using your hands.
  14. Gradually add approx. 5 tbsp of water and knead into a semi-soft Paushtic Paratha dough.

How to make paushtic paratha

  1. To prepare the paushtic parantha recipe, divide the dough into 15 equal portions.
  2. Shape a portion and flatten it and place on a rolling board.
  3. Roll out each portion into a 100 mm. (4”) diameter thick circle using a little wheat flour for rolling.
  4. Fold into half to make a semi-circle.
  5. Fold into again to make a small triangle.
  6. Roll to make a 100 mm. (4”) length triangular paratha using little flour.
  7. Heat a non-stick tava (griddle) and place the paushtic paratha over it. Cook till small blisters appear on top portion of the paratha.
  8. Flip and cook for a while and drizzle ¼ tsp of oil.
  9. Cook till brown spots appear on both sides of the paratha.
  10. Remove the paushtic paratha in a plate.
  11. Repeat steps 2 to 11 to make 14 more nutrient rich Paushtic Parathas.
  12. Serve the paushtic paratha hot with fresh curds.

a one in all recipe...just these parathas with curds make a great meal. it tastes just amazingwith spicy punjabi achaar...try it! potatoes and spinach blend well in these parathas. i usually make triangle shaped parathas but when in a hurry just roll it in a circle.
