A traditional fiery red thai curry simmered with assorted vegetables. An excellent complement to steamed rice.

Ingredients

6 to 7 tbsp red curry paste
2 cups coconut milk (nariyal ka doodh)
1 tbsp cornflour dissolved in 2 tbsp coconut milk (nariyal ka doodh)
1 tbsp oil
2 tbsp finely chopped basil leaves
salt to taste
1 cup blanched baby corn , cut diagonally
1 cup blanched broccoli
1/2 cup paneer (cottage cheese) cubes
salt to taste

    Method
  1. Heat the oil in a broad non-stick pan, add 5 to 6 tbsp of the red curry paste and cook on a medium flame for 1 minute.
  2. Add the basil and cook on a medium flame for 1 minute.
  3. Add the coconut-milk , cornflour-coconut milk mixture and salt, mix well and cook on a medium flame for another 5 to 6 minutes, while stirring continuously.
  4. Add the babycorn, broccoli and paneer, mix well and cook on a medium flame for 2 more minutes.
  5. Serve hot.

Preparation For Thai Red Curry

  1. For preparing the Red Thai Curry, we would require an aromatic, fresh Thai curry paste. While it is readily available in stores, you can make one using this detailed recipe of  with step by step photos at home
  2. The base of the Thai Red Curry is coconut milk. Even that is available in tetra packs but, I love preparing at home. This one is thick and rich & helps in making a beautiful thai red curry
  3. To thicken the Thai Red Curry, we would require a slurry. For that, in a small bowl, take cornflour
  4. Add 2 tbsp coconut milk. Mix well and keep aside.
  5. Further, slice babycorn diagonally. 
  6. Cut the broccoli into florets.
  7. Transfer the baby corns in a bowl of water. Place it in the microwave and microwave on HIGH for 7 minutes.
  8. Remove and drain the baby corns. Keep aside.
  9. Similarly, place the broccoli in a bowl of water & microwave on HIGH for 7 minutes.
  10. Drain and keep the blanched broccoli florets aside.

How to make Thai Red Curry

  1. For making the Thai Red Curry, heat the oil in a broad non-stick pan. Coconut oil or sesame oil would lend a beautiful flavour as compared to vegetable oil.
  2. Once the oil is moderately hot, add 5 to 6 tbsp of the red curry paste.
  3. Add the basil and cook on a medium flame for 1 minute.
  4. Cook on a medium flame for 1 minute so it dries out.
  5. Add the coconut-milk.
  6. Add the cornflour-coconut milk mixture and salt.
  7. Mix well and cook on a medium flame for another 5 to 6 minutes, while stirring continuously.
  8. Add the baby corn and broccoli.
  9. Add paneer. You can add 1/4 cup of water adjust the consistency. 
  10. Mix well and cook on a medium flame for 2 more minutes. SInce the vegetables have been blanched before adding, there is no need to cook them for a long time. Our Thai red curry with vegetables is ready.
  11. Serve the Thai Red Curry hot with steamed rice.

Thai red curry is definately not VEGETARIAN dish as the red curry PASTE had Shrimp Paste in it

The ingredients do not mention kafir lime leaves, which give this curry its typical taste. The herbs to be added to the recipe are available packed by Trikaya. Available with vegetable vendor or Godrej Nature''s Basket.
