2 large surti raw bananas
2 tsp salt
oil for deep-frying

Method

  1. To make yellow banana chips, heat the oil in a deep non-stick pan on a slow flame.
  2. Meanwhile, make light slits on the raw banana peels at equal distance while taking care not to slit the raw banana.
  3. Trim both the edges of the raw banana and gently remove the peel using your fingers. Keep aside.
  4. Combine the salt and 4 tbsp of water in a small bowl and mix well till the salt dissolves completely. Keep aside.
  5. Slice half the raw banana using a slicer directly into the hot oil.
  6. Allow the banana slices to cook for ½ minute and then add 1 tbsp of salt-water mixture to the oil. Let this cook for ½ minute again and then gently mix well using a slotted spoon.
  7. Continue cooking the chips on a medium flame till they turn crisp from both the sides and the spluttering sound of oil-water stops, while stirring occasionally. Remove the banana chips from the oil and drain on an absorbent paper.
  8. Repeat the same procedure to make more banana chips in 3 more batches.
  9. Cool yellow banana chips completely and serve or store in an air-tight container.

  1. For preparing the Yellow Banana Chips, heat the oil in a deep non-stick pan on a low flame. We are using vegetable oil, the Authentic Kerala wafers are fried in coconut oil. You may use that if you like that flavour.
  2. Meanwhile, make light slits on the raw Kerala banana peels at equal distance while taking care not to slit the raw banana. Use surti or nendrankai / raw nendran plantain for authentic kerala style banana wafers.
  3. Trim both the edges of the raw banana and gently remove the peel using your fingers. Keep aside. Alternatively, you can use a peeler to get rid off the banana skin.
  4. In a small bowl, take salt. Replace salt with sendha namak if you wish to relish this crispy yellow banana chips during fasting. Add 4 tbsp of water in the same bowl.
  5. Mix well till the salt dissolves completely. Keep aside.
  6. Slice half the raw banana using a slicer directly into the hot oil. We would not suggest you to slice them on a plate or bowl and then put in oil as they tend to become black & sticky. So follow this method and ensure the distance between the pan and slicer is not too high or else hot oil might splutter on you. Also, do not overcrowd the pan or else the banana chips will stick to each other & not turn crispy.
  7. Allow the banana slices to cook for ½ minute and then add 1 tbsp of salt-water mixture to the oil. The oil will splutter but, do not worry just take care you are not very close to it.
  8. Let the Yellow Banana Wafers cook for ½ minute again and then gently mix well using a slotted spoon.
  9. Continue cooking the chips on a medium flame till they turn crisp from both sides and the spluttering sound of oil-water stops, while stirring occasionally.
  10. Remove the  Yellow Banana Wafers from the oil and drain on absorbent paper. For masala banana chips, sprinkle chilli powder at the end.
  11. Repeat the same procedure to make more  Yellow Banana Wafers in 3 more batches.
  12. Cool the Yellow Banana Wafers completely and serve or store in an air-tight container.

What if I don''t want to use salt, since I dont like salt. Is it not going to come out crispy

   Hi Noel, Without salt it will surely taste bland and have no taste. Add very little salt if you do not like much salt.
